Pizza base
Tomato sauce
Preheat the oven to 220C/200C Fan/Gas 7 and line a large oblong baking sheet with parchment paper. Put the flour into a large mixing bowl and stir through the salt.
Empty in the yogurt then start stirring to bring in the flour to form a dough – when the dough comes together, dust your hands with flour and begin to form it into a ball. Knead on a floured surface for a few minutes until smooth.
Using a floured rolling pin, roll the dough out as thin as possible to give a thin and crispy base. Transfer the rolled out dough onto the baking sheet and using your fingers press it out into the corners. We made this shape as it’s easier to cut into squares for sharing, but if you prefer, the dough can be rolled into a large rustic circle.
To make the tomato sauce, combine all the ingredients together then spread it evenly over the dough.
Top with toppings of your choice – we used olives, capers, mozzarella and cheddar. Bake for 15-20 minutes until the cheeses are bubbling and the base looks crisp and golden. Drizzle with olive oil and fresh basil leaves to serve.
